Recently in an interview with Game Informer, the art director for Pokemon Sword & Shield talked about how the United Kingdom was his inspiration for the Galar Region.

-James Turner has worked on other Pokemon projects before such as Pokemon Battle Revolution on 3DS. When development was beginning on Sword & Shield, the team asked James Turner to join so they could get his opinion on the game’s countryside and culture as he had a lot of knowledge about the UK.
-When he became art director for the game, he had two important aims. One was to capture the beauty and appeal of the UK. One was also to convey to the true nature of the UK such as small details and not just a rough postcard interpretation.
-For example, sign boards in the game were given a medieval and fantasy look. He decided to get the development team to change it to how sign boards actually look in the UK so it will feel more familiar to those from the country.
-They also tried to create a lot of variety in the region with many colorful areas to create a more fun and exaggerated version.
