Rakuten Books has put up listings for Sushi Striker: The Way of Sushido for both Nintendo Switch and Nintendo 3DS, indicating a June 8, 2018 release date.
Sushi Striker was initially revealed at E3 2017 for Nintendo 3DS. If the listing is true (which 100% of the time it is, given that Nintendo sends out information to Japanese retailers a day before Nintendo Direct and other announcements), Sushi Striker will be released on both consoles at the same time, a huge surprise given many thought it would be exclusive to 3DS.
Both the 3DS and Switch versions will cost the same at retail, with a suggested price of 5378 yen (USD51).
